Cooper’s Hawk Winery and Restaurant is set to move into West St. Louis County's Town and Country Crossing by the end of 2013 or beginning of 2014.
Town and Country Planning Director Sharon Rothmel tells Patch, the restaurant will move into the space at 1000-1272 Town and Country Crossing Drive, near Clayton Road and Highway 141.
Rothmel points out she had not even received plans for the restaurant yet and said this project is in its initial stages.
"It's my understanding they've signed the lease and they're currently designing the restaurant," Rothmel said.
The new restaurant will incorporate the former locations of Eugene's Custard and Three Dog Bakery (which has moved to a new location in the shopping center), plus a third building that will be constructed to the east of those two locations near the shopping center lake.
"It was always intended that that area would be used for a restaurant," Rothmel said.
The restaurant is expected to be approximately 9,000 square feet.
According to the a recent article in Sauce Magazine, Cooper’s Hawk is a chain of restaurants offering upscale casual dining. The eatery typically offers a full-service bar, private barrel-aging room, Napa-style tasting room and gift shop.
"I think it will be an asset ot the region," Rothmel said. "We're very enthusiastic to see...a unique restaurant come to our community. We're excited. It will be a wonderful addition to Town and Country Crossing and we continue to be pleased with the success of Town and Country Crossing."
According to the restaurant chain's website, it currently has 11 locations in five states and plans to open four more locations, including the Town and Country location.
